Gingerbread Waffles

Gingerbread Waffles

Author Gourmet International Pancakes and Waffles, c.1970

Ingredients
1 1/2 cups sifted flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon ginger
1/2 teaspoon salt
1/4 teaspoon allspice
2 eggs
1/3 cup sugar
3/4 cup buttermilk
1/2 cup molasses
1/4 cup butter or margarine, melted

Instructions

Sift first seven dry ingredients together into bowl.  Beat eggs and sugar together until thick and foamy.  Stir in buttermilk and molasses.  Add to dry ingredients and stir until dry ingredients are moistened.  Stir in butter or margarine.  Bake with waffle iron according to manufacturer's directions.

I have been serving breakfast for dinner about once a week lately this summer, mostly making waffles.  This recipe turned out to be so sinfully scrumptious I just had to share it.
