Madeover Stovetop Chicken and Rice
Ingredients
1/4 cup butter
2 tablespoons flour
2 cups low sodium chicken broth (I use Penzey's Chicken Soup Base--it has marvelous flavor, and less sodium than most canned broths)
1 teaspoon garlic powder
1/8 to 1/4 teaspoon salt, optional
3/4 cup brown rice
Melt butter in a deep heavy skillet, and brown chicken pieces on both sides. Remove chicken and set aside. Add flour to butter in skillet; stir until smooth. Add chicken broth, salt and garlic powder. Bring to a boil. Add rice. Reduce heat, cover and simmer 20 minutes. Add chicken and simmer, covered, 25 to 35 minutes or until most of the liquid is absorbed and rice is tender. Makes 4 servings.
One of my old standby favorite chicken recipes (quick, easy AND yummy) is Stovetop Chicken and Rice. Recently I've been tinkering with it to see if I could create a healthier version of it. This was my latest try, and it really turned out delicious. Although it doesn't taste exactly the same as the original, it was definitely just as delicious. Enjoy!
