Simple Slow Cooked Beef

Ingredients
2 tablespoons olive oil
1 4-pound top round roast
2 cups beef stock
3 cups burgundy or other full bodied red wine
1 bay leaf
1 clove garlic
1 tablespoon soy sauce

Instructions
Heat oil in a heavy-bottomed pot over medium-high heat, or brown beef in a 325F oven. Brown beef on all sides -- about 10 minutes. Pour in the stock and 1 cup of wine, plus the bay leaf and garlic. Cover and simmer slowly over low heat or in the oven about 3 hours, adding more wine to keep the level of liquid constant. Remove from heat and let cool to room temperature in the pot. Remove the beef and shred into small pieces, following the grain of the meat. It should fall apart easily. Return the shredded beef to the liquid. Heat until warmed through. Add soy sauce and salt and pepper to taste.
 
Note: This was pretty easy, and very good. The flavor was not necessarily complex, but it was juicy and delicious.  It was definitely a hit on Friday!

Amusing News Item

I found this news article both disturbing and amusing. The disturbing part was the discussion of germs and dirt, of course. What amused me was this quote:

 

Food in desk drawers also harbors lots of microorganisms, and it is more abundant among female office workers. Gerba found 75 percent of women had munchies in their desks.

"I was really surprised how much food there was in a woman's desk," he said. "If there's ever a famine, that's the first place I'll look for food."

I have to admit I'm guilty Embarassed...I almost always have food in my desk!

Friday Night Dinner

My husband and I are having a few friends over for dinner on Friday....here's what we're having. Will post any of these recipes if they turn out any good Laughing

 

Appetizers: Spinach Rollups....have had these, and they are GOOD! Get the recipe here.

Main Dish: Simple Slow Cooked Beef...haven't tried this, but it sounds YUMMY

Veggies: Apricot Ginger Carrots and Oven Roasted Green Beans

 

Dessert: Memphis Butter Cookies....melt in your mouth delicious,

White Cookies with Spots...haven't tried this, but it seems easy

Savory Chicken Crescent Squares


Ingredients
3 ounces cream cheese, softened
1 tablespoon butter or margarine, softened
2 cups cubed cooked chicken
1 tablespoon chopped green onion
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons milk
1 tablespoon chopped pimiento, if desired
1 (8-ounce) package refrigerated crescent rolls
1 tablespoon butter or margarine, melted

Instructions

Preheat oven to 350F. In medium bowl, beat cream cheese and 1 tablespoon softened butter until smooth. Add chicken, chives, salt, pepper, milk and pimiento; mix well. Separate crescent dough into 4 rectangles. Firmly press perforations to seal. Spoon 1/2 cup of chicken mixture onto center of each rectangle. Pull 4 corners of dough to center of chicken mixture; twist firmly. Pinch edges to seal. Place on ungreased baking sheet. Brush tops of sandwiches with 1 tablespoon melted butter. Bake for 25 to 30 minutes or until golden brown.

Serving size 2 or 3

These were a nice, quick dinner on a busy weeknight that was pretty tasty too. You definitely MUST press the perforations together....I got in too much of a hurry on some and they bubbled over, and were not nearly as pretty as the others :(
