Low Sodium Chocolate Cake


Author AHA Low-Sodium Cookbook

Ingredients
2 1/2 cups flour
1/3 cup cocoa
1 tablespoon plus 1/2 teaspoon baking powder
3/4 cup water
2/3 cup fat free milk
4 ounces baby food prunes
1/4 cup canola oil
1 teaspoon vanilla
4 large egg whites
1/4 teaspoon cream of tartar
1 3/4 cups sugar
Instructions

Sift together the flour, cocoa and baking powder. Whisk together the water, milk, prunes, oil and vanilla. Pour into a well in the flour mixture and stir until combined. Beat the egg whites with a mixer until foamy. Add the cream of tartar and gradually add the sugar, beating after each addition until the egg whites form soft peaks. Gently fold egg whites into the batter. Grease either a 9x13 pan or two 8 or 9 inch cake pans (round or square) and line the bottom with wax paper or cooking parchment. Pour batter into pan and bake at 375F for 35-40 minutes. Cool in pan for 5 minutes, then remove to cool. Serve warm or at room temperature.

I don't know if you've ever thought about it, but baked breads, cakes, cookies, etc can actually be pretty high in sodium. A Recommendation

I never make specific product recommendations--either in this blog, or in the recipes at Recipe Riot. There are too many local variations, generic products, and frankly, there are no kickbacks for mentioning the products :) So, believe me, when I finally decided to wax eloquent about this product, I'm really head over heels for it (because I'm definitely not getting any kickbacks for this either!).

I got a jar of Penzey's Chicken Soup Base and Seasoning about a year ago. You can use it as a substitute for canned chicken broth, or to just add flavor to soups and stews. I love it in part because you can use as much or as little as you need. If a recipe calls for a 1/2 cup or 1/4 cup of chicken broth, you don't have to then figure out what to do with the rest of the can. Anyway, I haven't found a recipe yet, that this soup base does not enhance. Imagine if you will that the flavor of ordinary canned chicken broth is like a three piece band--not bad, but limited. Penzey's Soup Base is more like a full symphony orchestra of flavor. One of the other benefits that I personally like about this soup base is that it has less sodium than most canned chicken broths (600mg per 1 cup versus 960mg per 1 cup).

So, do *yourself* a favor---get some of this stuff today.
